One of our favorite parts of Mardi Gras is finding the perfect king cake. Locals are constantly looking for the BEST King Cake sold in their area and some will take great lengths to recreate their own DIY king cake recipe. While others are looking for the perfect combination of sprinkled sugar, icing and flavored fillings I am on the mission to find the perfect cake flavor. Today I share (in my opinion) the best of both world- single serve cinnamon cupcake flavor with a cream cheese filling. I hope you enjoy our Filled King Cake Muffins.
Muffin:
3 cups flour
½ tsp salt
1 cup sugar
2 tsp baking powder
1 ½ cups milk
2 eggs
½ cup oil
1 tsp vanilla
Cinnamon Filling (recipe follows)
Cream Cheese Filling (recipe follows)
Preheat oven to 375. Spray muffin pan with cooking spray. Mix dry ingredients together in large mixing bowl. In a small mixing bowl, blend together milk, eggs, oil, and vanilla. Slowly add wet mix to dry, stirring just until moist.
Pour 2 TBS filling in each muffin cup. Top with 2 tsp cinnamon filling. Place 1 TBS cream cheese filling in the center. Top with an additional TBS of batter. Bake for 15-18 minutes, or until the center is set.
Cinnamon Filling
½ cup butter
½ cup brown sugar
1 TBS flour
1 tsp cinnamon
Stir together brown sugar, flour, and cinnamon in small bowl. Cut in butter with fork or pastry cutter until mixture is crumbly.
Cream Cheese Filling
1 8-oz package cream cheese
½ cup powdered sugar
1 tsp vanilla
1 tsp cinnamon
Cream together cream cheese and powdered sugar. Add vanilla and cinnamon, stir until blended.
You will enjoy the lightly cinnamon cupcake with the cream cheese filling we all desire. As you can tell the recipe is very easy to make and perfect for the parade route.

I love King cakes but just can’t make it. I think I could make these muffins so much easier. I know my brother would love these too, so I just may have to make these.
i need to invest in a good muffin tin set. When I moved I gave things away and now we have our own place again. I keep finding recipes like this that I want to go a head and make.
