Easy Mid Week Dinner

My work week is a disaster! Between homework, sports practices and household responsibilities I am exhausted. One way I save time is my meal planning properly. When all else fails I make a dinner that is quick and affordable with items I already have at home. What’s one thing I have plenty of? Eggs! Finding a egg dish is super easy. Tonight I made Tortilla de Huevo y papas. Tortilla de Huevo y papas is similar to a torte or casserole. Best part about the meal is that all I need is 4 ingredients and I can consider dinner a success.

Although my 4 ingredients are staples in my kitchen, my kids are getting the protein & calcium they need for strong bones. I don’t feel like a bad mommy any longer! Mi semana de trabajo es un desastre! Entre las tareas, prácticas deportivas y las responsabilidades del hogar Estoy agotado. Una forma de ahorro tiempo es mi plan de alimentación correctamente. Cuando todo lo demás falla hago una cena que es rápido y asequible, con artículos que ya tengo en casa. ¿Qué es una cosa que tengo un montón de? Huevos! Encontrar un plato de huevos es muy fácil. Esta noche he hecho tortilla de huevo Ÿ papas. Tortilla de Huevo y papas es similar a una torta o cacerola. Mi parte favorita de la receta es que tiene sólo 4 ingredientes

Aunque mis 4 ingredientes básicos en la cocina, mis hijos están recibiendo la proteína y el calcio que necesitan para tener huesos fuertes. No me siento como una mala mamá!     This looks easy and nutritious-much more so then going to a fast food restaurant if you were or are too busy to cook!

    What is it about potatoes and eggs that makes any meal delicious? This looks divine! Also? I love that this post was in english and spanish. It made me miss speaking it!

    Oh how I wish this could pass off as dinner. Maybe if I added some ham or bacon my husband would consider it. He doesn’t think it’s a meal without the meat. Weird man!

    Oh wow that looks so good, it’s like real food! I always call Mexican food like the one that my mom makes “real food”. It’s always so filling and delicious.
