My dentist can agree when I admit I have a major sweet tooth. Actually, I blame my husband for this! He HAS to have something sweet before he goes to bed each evening. Dr. Seuss Birthday Celebration – The Sneetches Activities

This year we chose to celebrate not only Dr. Seuss during his birthday celebration but also one of my favorite books - The Sneetches. This lesser known story gives children (and adults) and important lesson on diversity and acceptance. Being a Latina Blogger is very important to me. I embrace the many cultures that are apart of my everyday life and those that are unknown to me. In our first Dr. Seuss Birthday Celebration, we shared 2 easy snack ideas that you can use while homeschooling, during Continue Reading

Unfortunately dinnertime at home seems to be a challenge as well. time is our biggest obstacle and greatest asset. Whenever we can my family enjoys going out to eat versus an at home dinner. Why? Because we can eat in peace without the worry of cooking, cleaning and naturally meal Continue Reading

Apple-Guacamole Jicama Canapes

When I was little, my mother used to eat a root vegetable called Jicama. The origins of the Jicama derived from Mexico and other surrounding warm climate areas like Central America, Caribbean, the Andes mountains, and some parts of Asia. My mother swore it had various health benefits and religiously chopped up jicama into straws, making a refreshing slaw salad out of it. I never understood how vital jicama was not only to my mothers upbringing in Guatemala, but how vital the health benefits Continue Reading

Game Day Recipes – Plantain Quesadilla Bites

Are you ready for the big game this weekend? Nothing says game day recipes like a fun appetizer to keep football fans from feeling famished. Today we bring you: Plantain Quesadilla Bites. Super easy and fast to prepare, taste just like quesadillas, but with a twist. Already prepared plantain chips are the best option because they are stiff enough to hold up when the toppings have been added. I love this recipe because it is a savory recipe. The chicken and black beans adds much needed protein to Continue Reading

Dulce de Leche Galettes Recipe

January 3, 2014 by Maria

Galettes are a traditional French dessert, but it’s always fun to take a newfound delight and give it a Latin twist with my favorite flavors and ingredients. A simple, rustic apple galette can be transformed with rich Dulce de Leche that is added to the apples to bake. Thankfully apples are in season right now because the crisp apple paired with sweet dulce de leche makes for an addicting combo. Galette Dough Ingredients 2 cups all purpose or whole wheat flour 1 tbsp sugar ¼ cup ice cold Continue Reading

Apple Jalapeno Monkey Bread

December 27, 2013 by Maria

Warm monkey bread might not be the best meal replacement choice, but it certainly is the best tasting option! There are so many different topping options to monkey bread that work well, but the apple harvest had me thinking about my favorite apple combinations paired up with delicious monkey bread. Apple jalapeno is perfect for anyone that loves the taste of apples with a little kick. The combination is not meant to pack a punch of heat, but instead has a bold taste that is both sweet and Continue Reading

Mexican Style Zucchini Fritters

December 20, 2013 by Maria

Zucchini fritters are a quick and yummy way to use up piles of fresh zucchini that have been harvested at the end of summer and early fall. On of our favorite ways to enjoy zucchini is steamed with sauteed tomatoes, corn, cilantro and queso, so why not combine those ingredients to make Mexican style zucchini fritters. Traditional zucchini fritter recipes call for basil and rosemary, but out of all the fresh herbs that pair up well with zucchini, cilantro is one that I am very familiar Continue Reading

Deciding what to bring to a holiday party can be very daunting. You want something portable that is easy to tote to your destination but also something that may not be time consuming to create. Not only is it creative but it is very affordable and easy to create. Since pumpkin is so popular for its health benefits, today Continue Reading
