Mornings at my house pass by like a blur. While my son and I don’t have to be fully dressed until 7:40a.m, my husband wakes my teen up at 5:30 a.m in the morning! She’s running around trying to put her uniform, makeup and find all her school supplies before she runs out the door. I’m not proud, but I’m sure there are days she forgets about breakfast. Luckily her mother does not! Since every minute is of the essence, I prepare a light breakfast for her Sunday evenings so she can “grab and go” before running out the house.

Since we usually have Quaker® Life cereal as a breakfast option, it’s no surprise that Quaker® Life, Oatmeal Squares, Real Medleys®, or Simply Granola are perfect for creating delicious and wholesome recipes that can turn a traditional bowl of cereal into a fun, festive treat. We use our favorite Quaker cereals as a fruit topping, use it in our snacks and make cakes and breads with it as well.

Crunchy Mango Skillet Cake -  Quaker Simply Oats, Raisins #QuakerUp #LoveMyCereal #Spon

When I was little my family would attend church and look forward to street vendors who sold sliced mangos directly outside of church. I looked forward to our sweet treat and have incorporated mangos into many of my family dessert and breakfast recipes. Today I’m making a Crunchy Mango Skillet Cake for dessert and saving the leftovers for my daughter’s breakfast Monday morning.

For this recipe, I was able to get all of the ingredients at Walmart! Quaker® Simply Granola is easy to find in the cold cereal aisle and many of the other ingredients are things you may already have in your own pantry.

My Crunchy Mango Skillet Cake recipe is similar to an upside down cake. I use a skillet and caramelize my mangos prior to adding any “wet” ingredients. Adding Quaker® Simply Ganola Oats, Honey, Raisins & Almonds after my mangos are placed to caramelize, gives added texture and crunch while giving my family the wholesome fiber they need daily.

How to Make Crunchy Mango Skillet Cake

Step 1: Melt butter in a flat skillet until it starts to turn light brown. Pour your melted butter in another bowl. Add your sliced mangos to the same skillet. While your mangos are in the skillet, take brown sugar and evenly sprinkle over mangos. Add Quaker® Simply Granola.

Next take flour, baking powder, baking soda and salt and mix with a whisk. In a separate bowl combine melted butter, egg, white sugar and yogurt together and blend well. Next, take your wet and dry mixtures and combine. Mix thoroughly. Once all of my ingredients are mixed, pour over mango,brown sugar and Quaker® Simply Granola. Then bake for 35 minutes at 350.

  1. 1 Cup Quaker® Simply Granola

  4. 1 1/2 cup flour
  5. 1/2 tsp salt
  6. 1 tsp baking powder

    We try to keep things simple during the week (I don’t have much time to get everyone fed and out the door by 7:20 a.m.) On the weekends, we like to switch things up with different breakfast foods. This skillet cake looks amazing!

    This looks delicious. I buy that cereal and eat it with yogurt. I couldn’t find mine last night so I just ate my yogurt with some carmel popcorn.. It was actually good.

    This looks like a great recipe and one I am going to try. I mostly eat oatmeal in the am but do try and switch it around so I don’t get so bored with the first meal of the day. I love steel cut oats the best.
