Summer always reminds me of my childhood. Playing outside with my friends, riding bikes, walking to our local community pool and enjoying the sun and freedom that summer allotted us. Back in April, I left my full-time job outside the home to spend more time with my family. My kids are getting older (one starting junior high & one starting high school) and every day I spend with them is extremely valuable.

My daughter & I have been in the kitchen cooking and testing new recipes that our family can enjoy during the hot summer months. Every weekend we shop together and browse through the aisles as we spot our newest creation. Last week we visited Walmart who was hosting a Blue Bunny Ice Cream Demo. Our family LOVES ice cream and we usually have a few tubs in our garage deep freezer.

A week ago, my husband & I splurged and purchased shakes at a local fast-food drive through. Can you believe 4 shakes cost us almost $20?!? Today we noticed that Walmart was also promoting a price drop on Blue Bunny Ice Cream and Blue Bunny Novelty Ice Cream like ice cream sandwiches and ice cream cones. I took it as a sign that we should stock up and avoid our local dessert shop for awhile.

With Walmart’s low price on Blue Bunny Ice Cream, we could afford to create a special frozen treat for our family. I purchased 1 tub of Blue Bunny Ice Cream, 2 boxes of Blue Bunny Ice Cream sandwiches and a small tub of whipped topping and decided to teach my daughter how to make an ice cream cake. Going to the Blue Bunny Ice Cream Demo was a fun treat, but it’s a good thing I spoke with the associate working the demo table because she reminded me to buy a bottle of sprinkles!

Once we unloaded our weekly groceries, we set up our area to create the ice cream cake. My daughter was with me last month when I thought about purchasing an already made ice cream cake locally for Father’s Day. I quickly changed my mind once I saw how pricey the ice cream cake would have cost our family.

Since I left my full-time job recently, my goal is to make better economical choices for our family. Making our own ice cream cake is quick and very affordable. I purchased 2 boxes of ice cream sandwiches at $7, a tub of whipped topping at $1.98, sprinkles for $1.88 and I had chocolate syrup already in my food pantry.

Step 1: Arrange the 1st layer of ice cream sandwiches in a large serving platter. I used both chocolate and vanilla flavors, but you can use which ever flavor you prefer. Once the ice cream sandwiches are situated to my liking, I begin Step 2 which requires me to drizzle a thin amount of chocolate syrup on top of the first layer of ice cream sandwiches. The chocolate syrup acts as a glue between the 1st and 2nd layer of ice cream sandwiches. If I did not have chocolate syrup, I can use caramel or butterscotch.

Step 3: Add 2nd layer of ice cream sandwiches. I used a different flavor for my 2nd layer. Step 4: Add a generous layer of whopped topping to the assembled ice cream sandwich cake. Step 5: Garnish with chocolate syrup and/or sprinkles. Freeze for 1-2 hours before serving.

My ice cream cake is now complete! As with regular cake, ice cream cake will be very decadent. Slice a small piece and serve.

    I LOVE recipe hacks that make things easier and faster. I would NEVER have thought to use Ice Cream Sandwiches to make an ice cream cake and it is genius!! SUCH a cool idea!
