International Delight Light Iced Coffee-Delightfully Cafe’ Flan Recipe #LightIcedCoffee

International Delight Light Iced Coffee only 100 Calories per serving.

I’m a huge coffee nut. I normally drink anywhere from 1-3 cups a day. Frappes, Cappuccinos, regular cup of Joe, I like them all. During the work week I normally have about 30 minutes to sit a drink a cup of coffee in peace before I head on over to work. To me, it is my few minutes of complete sanity. I sometimes I drink my coffee at home or other times I run to my favorite drive thru for a small specialty coffee or iced coffee. But running to the coffeehouse everyday can financially add up. To be more economical I’m always looking for an at home version of some of my favorite lattes or ice coffee drinks.

International Delight Light Iced Coffee available at Walmart

While shopping at Walmart this week I purchased International Delight’s Light Iced Coffee beverages in the milk aisle. Two big factors prompted me in purchasing the light Iced Coffee Beverage.

1. A half gallon carton is less than $4.00!

2. The Light Iced Coffee is under 100 Calories per serving.

With various flavors, I decided to go with a standard Light Vanilla. As you can see in the picture above, I had a large selection to choose from. One of my co-workers actually brought a carton at work and left it in our employee refrigerator during the work week. I thought then that the International Delight Iced Coffee was an interesting idea so I couldn’t wait to get it home and test try it this weekend.

As I was shopping, I decided to make one of my favorite Mexican desserts for my family: Flan. I thought how cool would it be to incorporate two things I really love: Flan & Coffee?!? I honestly planned on adding only a few tablespoons of the international Delight Light Iced Coffee, but when I got home to discover I bought 1-12 oz can of evaporated instead of the standard 2 I normally make I thought I was in trouble. So I took a chance to add more international Iced Coffee to my routine recipe than I had expected.

I added a whopping 12 ounces in Light Iced Coffee!! I was so nervous. My idea would either be brilliant or a complete fail on my part. I decided to continue the process and complete my task. Failure or not, I was going to give it a shot. What happened next was…brilliant!! Pure perfection. Check out my G+ photo album to see how I made the Flan using reduced calorie International Delight Light Iced Coffee. You can surprise your family with this sweet treat as well. You can find more information on International Delight Light Iced Coffee on their website, Twitter, or Facebook page. You can also visit the

Just about any coffee – as long as it has a mininum of some milk or cream in it. I have a hard time drinking black coffee.

Not a fan of flan (LOL) but I’m so glad there’s a Light version of my beloved Iced Mocha! I have to force myself to only pour a glassful, I love it so much I could chug it from the carton :)
