Jalapeno poppers are a game day food favorite, but these banana pepper are an updated version using a pepper that is not as hot, combined with a classic Mexican cheese. Grilling them gives you a healthier version to enjoy. Move over fried jalapeno poppers, our grilled banana pepper poppers recipe give you an authentic twist to the deep fried version.
Grilled Banana Pepper Poppers
Ingredients
4-6 Banana Peppers
1 small tomato, diced
Small queso ranchero
8 ounce tub of sour cream
½ lb bacon
Shredded cheese (optional)
Start by cleaning and de-seeding your banana peppers. Cut a slit along the side of a pepper, towards the top, slice back up to create an opening. Save the piece of pepper that you cut out so you can add it to the banana pepper filling later. Remove all the seeds and dispose of them.
Wrap the banana peppers up in aluminum foil and grill over a high flame, for two to three minutes on each side, making sure that the peppers gain a little color.
While the peppers are grilling, cook the bacon in a small skillet. Once the bacon is cooked, dice it up. Combine the sour cream, bacon, queso ranchero crumbled and diced tomato and slivers of banana pepper you saved from earlier. Cook over low heat and stir constantly.
Remove grilled peppers from heat and allow to cool completely. Spoon the cheese filling into each banana pepper, top with shredded cheese if desired. Serve hot.
