Warm monkey bread might not be the best meal replacement choice, but it certainly is the best tasting option! There are so many different topping options to monkey bread that work well, but the apple harvest had me thinking about my favorite apple combinations paired up with delicious monkey bread. Apple jalapeno is perfect for anyone that loves the taste of apples with a little kick. The combination is not meant to pack a punch of heat, but instead has a bold taste that is both sweet and spicy.
To make the freshest, best tasting monkey bread, homemade bread dough is key and dough isn’t as hard to make as most people think. To reduce the need for more sugar, pick apples that are sweeter or get sweeter with cooking — Gala, Lady and Red Delicious are best. Once you’ve fallen in love with apple jalapeno monkey bread, you’ll be trying to cook up every flavor combination you are already in love with to top your bread with.
Sweet Dough Ingredients
5 cups flour, well sifted and divided into one 2 cup portion and one 3 cup portion
¼ cup warm water
2 eggs
2 tsp active dry yeast
1 ¼ cup milk
pinch of salt
⅓ cup melted butter
¼ cup sugar
Apple Jalapeno Topping
1 1/2 cup sugar, divided into 1 cup and ½ cup portions
2 apples, peeled, cored and cubed
2 jalapeno peppers, cut into quarters
1 tbsp apple pie spice
1 cup apple cider
½ cup butter

Prep your sweet dough ahead of time because it will need several hours in the fridge once it has been made. To start, begin by prepping the yeast according to the package instructions of the brand you have bought. Generally, it is ¼ cup warm water to one package of dry yeast, left to dissolve in a medium sized bowl. Once the yeast has dissolved and is frothy add the 2 cup flour portion, sugar, salt, milk, eggs and the melted butter to the mixing bowl. Mix all the ingredients to form a wet mixture. Slowly firm up the dough by adding the three cup portion of flour one cup at a time and mixing well. Dough is ready to be refrigerated once it begins to form a ball and is no longer clinging to the sides of the bowl.
Cover the mixing bowl with a kitchen towel or paper towels and refrigerate your dough for six to eight hours. The apples and apple jalapeno topping won’t take you more than a half hour to prepare so if you prep the dough in the morning you can start on the apples later in your day.
In a small saucepan add the apple cider and jalapenos, cook over medium heat for fifteen minutes until jalapenos are soft. Add the ½ cup sugar portion and cornstarch, one tablespoon at a time to the pan, mixing well. Spoon out the jalapeno quarters and discard. Let the topping cool while you work on making your monkey bread.
Once your sweet dough is through resting, remove it from the fridge and turn it out onto a well floured surface. Flour your hands and pat the dough ball out flat to about an inch and a half thickness. Use a bread knife to divide the dough up into strips an inch thick and then cut the other way to create 1 inch by 1 inch pieces. These dough squares are what you are going to form your pull apart monkey bread with.
Melt the ½ cup butter in a bowl and in a second bowl mix the 1 cup sugar portion with the apple pie spice. Prep your bundt pan for baking with a good coat of non-stick spray. Dunk each dough piece into the melted butter and quickly follow it up with a dunk in the sugar and spice mix. Drop dough bits into the bundt pan one at a time. One sweet dough recipe will fill a bundt pan about three quarters of the way, leaving room for the bread to fluff and rise.
Once all the dough is in your pan, pour half the apple jalapeno syrup over the top (what will be the bottom) of the dough. Set the saucepan aside because the remaining half will not be used till the monkey bread is baked. Slide your bundt pan onto a flat baking sheet to prevent spillage in the oven. Bake at 350F for 35 minutes.
While the monkey bread is baking get your apple topping prepared. Add the diced apples to the small saucepan with apple jalapeno syrup and toss over low heat for 6-8 minutes. You want your apples to be soft, but not mushy. Once your monkey bread is cooked, let it cool for five to ten minutes and then flip it out onto a flat platter. Add the apples in jalapeno syrup to the top of your monkey bread and serve! Monkey bread is best enjoyed warm and by pulling apart the dough pieces with a fork rather than slicing.
