Start Your Day Like Carnival Royalty – Mardi Gras Pancakes

Mardi Gras Inspired Recipes - Carnival Pancakes

Being creative in the kitchen can be quite exhausting. Now that my children are getting older, I find myself spending less time in the kitchen and enjoy quality time with them OUTSIDE the kitchen. But I do make exceptions for the holidays! Carnival Season in Southeast Louisiana is BIG. In fact, I would rather by pass Valentines and start counting the days until our 1st local Mardi Gras parade rolls into town.

Today I am sharing a fun way to incorporate Carnival Season into our meals without the add time and financial constraint that holiday cooking can bring. Making pancakes is an affordable and time efficient meal for your family. You can start your day like a Carnival King (or Queen) by preparing our “Carnival” Mardi Gras Pancakes. Enjoy!

“Carnival” Mardi Gras Pancakes
1 boxed pancake mix, prepared
1 1/2 cup yellow Wilton Candy Melts, divided
1 1/2 cup purple Wilton Candy Melts, divided
Leaf Green Wilton Icing Tint (can use green food coloring)
Maple Syrup

How to make Mardi Gras Inspired Carnival Pancakes

Heat griddle to 350.
Prepare pancake mix as directed on package, and divide equally between two bowls. Tint one bowl to desired shade of green. Coarsely chop candy melts. Add 1/2 cup yellow and 1/2 cup purple to each bowl, stirring well.

Beginning with the plain colored mix, pour 1/4 cup of mix onto griddle. When top begins to bubble and edges dry out, flip and cook until light brown. Repeat until plain mix is finished, stirring occasionally as candy melts will sink.

Repeat with the green batter.

Once pancakes are slightly cooled, transfer to a cutting board. Cut into circles (or other desired shape). Arrange on plates, top with syrup and remaining chopped candy melts.

    I’d think I’d pass on Valentines Day too and dive into Mardi Gras THOSE PANCAKES LOOK DIVINE!!
