When I think of fall & winter I think of food, more importantly dessert! My daughter and I slashed our sugar intake dramatically this summer. We started to notice changes in our health that made me concerned about diabetes and pre-diabetes. An estimated that 57 million people have pre-diabetes in the US, and 35% are estimated to be Hispanic. That’s scary!
Since my Dad, grandmother (Dad’s mom) and my Dad’s grandmother are diabetics, managing my blood sugar spikes and sugar cravings is something that comes natural to me. 6 million (23%) Hispanics in the United States have diabetes compared to 20 million of non-Hispanic whites. Staggering isn’t it? I try to use sugar replacements, whole wheat or diabetic friendly flour and look for ways to satisfy my hunger (cravings) without spiking my glucose level.
Today I’m baking a family favorite, Pumpkin Spice Muffins using a secret ingredient. If you promise not to tell to share, I let you in on the secret ingredient – Glucerna!
I worked in a Skilled & long-term Nursing facility for several years and learned about more about diabetes and carb management. For today’s recipe, I purchased a 6 pack of butter pecan flavor Glucerna CARBSTEADY®. The pecan flavor adds that “sweet nutty” flavor your sweet tooth is looking for in a pumpkin spice muffin. There are several baking ingredients in this recipe. Most of the items are already in your baking cupboard, but you can also download a money saving Glucerna coupon for $1 off of any one (1) Glucerna product.
Follow the recipe below! You are using such a small amount of each ingredient, that it’s bound to last throughout the holidays.
Pumpkin Spice Muffins
2 cups whole wheat flour
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
2 tsp nutmeg
2 tsp cinnamon
1 cup applesauce
1 cup of mashed pumpkin
1/2 egg or egg substitute
1/4 cup plus 8 packets of sugar substitute
2 tbsp veg. oil
1 tsp almond extract
1 – 8oz bottle of Glucerna Sake (Butter Pecan flavor)
Combine 2 cups whole wheat flour , 2 tsp baking powder, 2 tsp baking soda, 1/2 tsp salt, 2 tsp nutmeg, 2 tsp cinnamon, 1 cup applesauce in a medium mixing bowl. In another mixing bowl combine 1 cup applesauce, 1 cup of mashed pumpkin, 1/2 egg or egg substitute , 1/4 cup plus 8 packets of sugar substitute , 2 tbsp veg. oil, 1 tsp almond extract, 8oz bottle of Glucerna Sake (Butter Pecan flavor). Mix thoroughly then combine dry ingredients with wet mixture.
Once the batter is mixed properly, line cupcake pan with individual liners. Fill to the top with muffin batter. Bake for 25 minutes of 350F. Allow to cool for 10 minutes then enjoy for a diabetic friendly treat.
Being non-compliant with diabetes is not an option! My father has been in and out of the hospital due to his diabetes, pancreas and other diabetic related issues like foot wounds which can become septic. It’s scary!
