The holidays are coming up and that means Christmas shopping, wrapping gifts and classroom parties. Many schools and classrooms like to celebrate the holidays with a party. Although these parties vary greatly, one of the common themes from classroom to classroom is food. Everything from cookies to candy canes can be brought in. Although kids tend to like those treats, this classroom holiday recipe will be both delicious and healthy. The students will thank you for making this cute treat.
Shortcake Supplies
• 1 2/3 cup self-rising flour
• ½ tsp baking powder
• ½ cup sugar
• 1 stick softened butter
• 1 large egg
• ½ cup milk
Topping Supplies
• 3 dozen fresh strawberries
• 1 tsp vanilla extract
• 1 block cream cheese
• ½ cup sour cream
• ¼ cup heavy whipped cream
• ¼ cup confectioners’ sugar
Step One
Add the first three dry ingredients from the shortcake supplies list. Mix the dry ingredients in a bowl until they are combined. Next, place the stick of softened butter in with the dry ingredients and use a mixer to blend them together. The mixture should look like breadcrumbs.
Step Two
Next you need to add the wet ingredients. Add the large egg and the ½ cup milk and mix together. The texture of the mixture should be a little thicker than normal cupcake batter since we’ll be making shortcakes. If you need to, you can add a little extra milk until the consistency is just right.
Step Three
Using a mini cupcake pan and Christmas liners, spoon the batter into the cupcake liners. They should be filled about ¾ full. Put the pan in the oven and bake them for 15-20 minutes at 350°F until the tops are golden brown. Pull the cupcakes out of the oven and allow to cool slightly so that the frosting doesn’t melt.
Step Four
To make the topping, place all of the ingredients except the strawberries in a bowl and mix together until the mixture is creamy and smooth. This should take 2-3 minutes to get the right texture. After the topping is mixed together, you can spoon it into a frosting dispenser with a star tip. You should also wash the strawberries and prepare them for use by cutting off the greens.
Step Five
This next step is the fun step! Now you get to decorate your strawberry shortcake Santas. To do this, pipe the frosting on the top of the cupcakes. You should allow part of the cupcake to peek through on the sides which will serve as the Santa’s face. After you’ve topped the cupcake with the frosting, place a strawberry on top like a Santa hat. Using the frosting again, place a small ball of frosting on the tip top of the strawberry. To complete your Santa cupcakes, use either chocolate chips or sprinkles to create the eyes.
