Christmas was a few weeks ago and after holiday clearance sales are my opportunity to stock up on some key items that I can use year around. As if chocolate covered cherries were not cheap enough, I usually stock pile several boxes when marked down and freeze them to make tasty treats at a fraction of the cost. Valentines is right around the corner so I know how to make use of a huge markdown.
Being invited to a potluck or dinner party means you are asked to bring a covered dish or dessert with you. While I am in love with one pot dinners, I love to bring sweet treats that guest would not normally bake on their own free time. Being creative in the kitchen is fun for so many foodies, but let’s face it, our time is limited and ideas can be scarce. Today we are featuring a spin on traditional cupcakes by featuring Cherry Cordial Cupcakes.
INGREDIENTS
1 box Devils Food Cake Mix
Vegetable Oil (per box)
Eggs (per box)
Water (per box)
1/4 cup Flour
32 drained Maraschino Cherries
1 Box Chocolate covered Cherries
1/2 cup Powdered Sugar
8 oz Cream Cheese
4 tbsp Butter
1/4 cup Heavy Cream
Hershey Chocolate Bar
DIRECTIONS
Mix cake mix according to box directions.
Place cupcake liners in pan and fill them half full.
Roll 16 maraschino cherries in flour. Place one cherry in the center of each cupcake.
Bake in 350 oven 20-25 minutes or until a toothpick inserted comes out clean.
Cool on a wire rack.
Put chocolate covered cherries, powdered sugar, cream cheese, butter and cream in a pan over low heat.
Bring to a simmer crush the cherries and stir until melted.
Simmer for 10 minutes then allow icing to cool for 20 minutes.
Frost cupcakes.
Scrape chocolate bar to create shavings.
Garnish with a maraschino cherry and chocolate shavings.
From biting into the cupcake to licking the frosting off your fingers, guests will enjoy the taste of chocolate & cherry in every bite. Don’t forget to make a batch for yourself! It is definitely worth using your precious freezer space with your heavily discounted box of chocolate covered cherries.
